| Details: Lamb and mutton. The Thomas family from Bala have farmed the Aran Mountains for well over a century.
Maldwyn Thomas is the tenth generation of the 'Thomases' to have farmed at Cwm Onnen Farm. There he and his wife Margaret are now reaping the reward of years of hard work to ensure organic recognition for their lambs. We farm one third of the Aran Mountains. Their organic lamb business has now won first prize in the Welsh stage of the National Farmer Union - Farming Excellence Awards, in the category "Great British Food".
The organic coop recommends shoppers to check their order contents with Aran Lamb before payment. This follows a customer report of an incomplete order that wasn't resolved to the customer's satisfaction. We have reviewed the Aran Lamb website and have found it is confusing what cuts of lamb you receive for your money. |

| Details: Lamb and beef rare breeds, organic meats, organic black pudding. We chose traditional breeds because they would fit in well with the organic way we wanted to farm, and by keeping rare breeds we could help maintain their genetic variety. The animals stay outside all the year with the exception of the ewes who lamb inside and the calves who are housed at weaning. During the winter we supplement the grazing with big bale arable silage and the cows also have access to the yard during the wettest part of the year to avoid poaching the land. We completed our organic conversion in April 2001 and are registered with the Soil Association. In 2002 we were delighted to be included in the BBC publication "Rick Stein's Local Food Heroes" and have subsequently been listed in his 2004 directory.

The cheeses "Lammas", "Beltane", " Samhain" and "Imbolc" are all hand-crafted using traditional farmhouse recipes and are all suitable for vegetarians, those with a dairy intolerance to cow's milk e.g. IBS and other allergy-related conditions such as asthma, ezcema and migraine.
The sheep at Capel Gwnda are all grazed on chemical free south facing hills above the beautiful valley of the River Ceri in the clean, unpolluted, rural landscape of Ceredigion just a few miles from the coastline of Cardigan Bay watered from an ancient holy healing well located on the farm which was once renowned for its cures [Lluyd Par. Parochalia (1695-1698) E. Lluyd. Arch. Cam Suppl. 1909, 1910-11]. Today the holy well is still providing the flock with the pure unadulterated spring water perhaps still giving a little "something extra" to the milk, who knows? |

| status: organic |
| Product: meat |
| Details: All the meat we sell comes from animals
born and reared on our farm in the Llanthony Valley, in the heart of
the Black
Mountains. We have a suckler herd of pedigree Welsh
Black cattle which are reared on grass and our own conserved forage.
The
breed thrives on traditional grassland and the meat is distinctive and
much acclaimed.
The lamb and mutton come from our flocks of Badger faced Welsh mountain
and white
faced woodland sheep. Badger faced Welsh mountain sheep are an ancient
breed,
dating back to the 14th century and the hardy and attractive ewes and
lambs are
ideally suited to grazing the hillside and producing quality small
carcasses from
grass. Whitefaced woodland sheep are a very rare hill breed from
Yorkshire ideally
suited to extensive grazing on the Welsh mountains.
We also have a small herd of organic British Lop pigs. British
Lops are one of the rarest breed of pigs in the British Isles. The pork
is
tasty and succulent and the crackling superbly crispy.
The farm is biodynamic, a form of organic farming developed by Rudolph
Steiner.
The beef and lamb is fully biodynamic, the pork is registered organic
by the
BDAA rather than biodynamic as we cannot grow our own pig feed and so
have
to buy in organic feed.
Our animals are slaughtered at the nearest abattoir: James at Raglan
for the lambs
and pigs and Ensors, at Cinderford, for the Cattle.
We sell our meat at Abergavenny Farmers Market (4th Thursday of every
month) and
at Usk Farmers Market (first and third Saturday of every month).
Visitors see map are
also welcome at the farm by prior arrangement.
If your are interested in buying half pigs, jointed and ready for the
freezer,
eighths or quarters of Welsh Black beef or half lambs from our flocks
of rare
and traditional breed sheep, please ask. |

Fresh Chocolates made to order

Please note that we are closed for January, but may be able to meet special orders. Contact us on 01981 550834
You'll find us in Herefordshire's Golden Valley, where the countryside even today is fresh and unspoiled. From our manufacturing base we have magnificent views across to the Black Mountains in Wales. According to an article in the Sunday Times (August 2003), "only three large reservoirs of tranquillity remain in England: North Devon, the Marches of Shropshire and Herefordshire, and the North Pennines, all of which have dark night skies". So, if you feel guilty about eating chocolates, we have a solution for you. Come to Herefordshire, and eat them in peace, and in the dark!
Our aim is to make our chocolates as fresh and unspoiled as the landscape. They're full of genuine flavours - real butter and cream, real alcohol, local (and sometimes hedgerow) fruits. Nothing is added that might spoil the flavour - so no preservatives, and, of course, no added fats. We use only top quality Belgian and French chocolate, and we're sure you will not be disappointed by the results. |

We are converting the system to an organic farming method, and the holding and type of animal lends itself well to this.

Hafod y Llan will be developed further as an education resource, both for schools and for groups.

| Details: Howe Horticulture is a small market garden and nursery business run by myself ,Bill Howe, with assistance from my wife Pauline. It is based on a field site in Tutshill, which we have been developing since 1996. Prior to running the market garden I was mainly involved in landscape gardening. I originally trained in agriculture at Wye College in Kent and also have a teaching qualification. In the early eighties we had a market garden in the Midlands where we grew salad crops. We have one daughter, Abigail 21, at university who occasionally works for us.
Our main output is cut flowers starting in spring with a range of Daffodils through to Chrysanthemums in the autumn. Our popular flowers include Sunflowers, Iris, Asters, Lillies and Godetia, in total we grow over 40 different species. Pauline specialises is using her artistic flair to produce mixed "country style" bunches.
We grow a range of annual and perennial flowering bulbs, bulbs in pots vegetable plants and herbs (new this year). In the autumn our field grown Wallflower plants are popular. At Christmas we produce decorative holly wreaths and seasonalbulbs in containers.
We try to grow in a manner that is as environmentally friendly as possible. For fertility we use a mixture of organic based fertilisers, home produced compost, green manures and composted stable manure. We keep sprays to a minimum by growing flowers that have pest and disease resistance and encouraging beneficial insects. We find that ladybirds do a good job of cleaning up aphids (they love to breed on Sunflowers). Some flowers are prone to fungal disease so a protective spray on these is used, as is the occasional insecticide application and a Glyphosate herbicide to deal with persistent weeds. weed control is mainly by hoeing, flame gunning, using " stale" seedbeds and hand weeding.
Farmers Markets are an excellent retail outlet for us and we attend the Chepstow and Usk markets regularly for most of the year.

| Details: We produce pork, lamb and beef from our own herd of Berkshire, Gloucester Old Spot and British Lop pigs, Jacob sheep and British White Cattle.
Because we breed rare and traditional animals, you get the rich, succulent flavours from the meat that you used to get years ago.
Although we are not organic, we do not use growth promoters or use any medication in the feed, we only give selected drugs were necessary, and all the animals are allowed to grow naturally.
Due to constraints, we rear our pigs indoors, (unless they escape) as we do not have enough grazing for them outside, and when raining it soon turns into a horrible mess, so they are all kept in nice airy big stables bedded on straw and mucked out every day.
All our lamb and beef are grass reared so you do not have loads of fat, so you are paying for meat with a full bodied flavour that is nice and tender.
Our aim is to help conserve all of these wonderful breeds, and for people to try and enjoy real meat again

| Details: Penrhiw Farm is an upland farm , extending to 70 hectares situated on
the eastern side of the Taff Bargoed valley in the county borough of
Merthyr Tydfil, South Wales.
The farm has been owned by the Thomas family for at least four
generations, and the farmhouse is of the traditional Welsh long house
type with a stone barn attached.
A flock of purebred South Wales mountain sheep, known localley as
Nelsons, was established fifty years ago. These ewes are renowned for
their hardiness and tremendous natural mothering instincts and produce
lambs of excellent flavour. A proportion of the flock are crossed with
Suffolk and Charolais rams to produce early lambs for the market.
The herd of suckler cows is bred with our pedigree Aberdeen Angus bull.
The calves are born in the spring and suckle their mothers for nine
months. They spend the cold and wet winter months indoors and are then
turned out onto fresh grass in the spring. The cattle thrive on our
upland pastures and readily produce good quality beef.
The farm is mainly permanent grassland , together with a small area of
forage crops which are grown to support the livestock. Penrhiw Farm
achieved organic status in March 2001.

| Details: Organic pies and pasteries
Why we're different
We source fresh British raw meat and cook it perfectly.
(Lots of other pie makers and food companies buy big tubs of ready-cooked, frozen or canned meat, often from South America.)
We glaze every pie & pastie by hand with free range eggs.
(Lots of other companies use orange artificial "egg-colour" designed to spray millions of pies through an automatic machine).
We don't use artificial ingredients at all. Ever.
Or hydrogenated fats, MSG, or any Genetically Modified ingredients.
We make all our pastry ourselves so we know what's in it.
(Lots of other pie and pastie companies buy in their pastry - you'd be as surprised as we were if you knew who they were...)
We are accredited by OF&G,the UK's oldest Organic accreditation body. |

|
| 01654 782294 |
| cg@clara.co.uk |
|

| Product: wholesale |
| Details: The aims of the Mawddach Wholefood Co-operative:
? To obtain wholefoods, organic food and related products for
members by bulk buying
? To encourage the purchase and supply of such goods by individuals
and businesses
? To inspire other areas to operate similar local projects.
As a co-operative, all members have an equal say in the running of the project
and are active in practical tasks. Membership is open to anyone willing and
able to participate. There are currently about a hundred members. By
purchasing in quantity, dried goods can be bought significantly cheaper than
through supermarkets, even after ten per cent has been added to cover
running costs.
The group’s premises acts as a collection point for a local fruit and vegetable
organic box scheme and as an outlet for local eggs. From a sustainable
perspective such bulk buying reduces packaging, while concentration on
organic products achieves beneficial effects for the wider environment.
In relation to the future, the co-operative realises that it is now reaching a
practical limit in size and turnover. It would encourage others to start new
groups so that such projects can operate within, and serve, a relatively small
geographical area.
Tips for others: ”Because we operate as a co-operative we must balance trust
with common sense. There is always a core of members who do most of the
work and others who feel things are being run for them!”

Welsh hill farm located in the foothills of the Preseli Mountains at Rosebush in

| Details: The pioneering origins of Rachel's Organic Dairy really began with Rachel Rowlands' grandmother, Elizabeth the first ever woman Dairy Technologist at Aberystwyth University, Wales. Having fallen in love and married Abel Jones, the Professor of Agriculture, Elizabeth was tragically widowed at the age of 45. With no job and three young children to care for, she soldiered on as a tenant farmer and single mother.
In 1942 she moved to what was eventually to become the family farm Brynllys, near Borth. At that time, practically all farms were 'organic' in that they were farmed using traditional methods. However, by the late 1940s, the shortage of food during World War II had prompted many farmers to switch to more intensive forms of agriculture, using chemicals to boost yields. But Rachel's family firmly rejected this option, preferring to stay true to their beliefs in traditional organic farming - working in harmony with nature, the elements, the seasons and wildlife.
During this period, Rachel Rowlands' mother Dinah became one of the earliest people to sign up to the Soil Association, thus supporting the foundation of the organic movement in Britain. Following a visit in 1952 by Soil Association founder Lady Eve Balfour, Brynllys became the very first certified organic dairy farm in the UK and today has the longest continuous record of organic production. Dinah was also responsible for introducing Guernsey cattle to Brynllys which was then built up to a prize-winning dairy herd.
Dinah, now in her nineties still lives at Brynllys, as do her daughter and son-in-law, Rachel and Gareth, who took on the farm in 1966. Together they went on to found the company Rachel's Organic Dairy.

| Details: After running a guest house in the Lake District, 4 years ago we decided to move to beautiful mid-Wales to continue making the preserves our guests so enjoyed. We bought a lovely 300 year-old cottage overlooking the Irfon River, with a large garden and numerous fruit bushes. This house and garden have given our business its name, and here is where we personally prepare all our jams, chutneys and flapjacks, making them truly home-made.
Most of the ingredients used in our products are sourced locally, and where possible the fruit and vegetables are grown here in our garden without the use of chemicals. None of our products contain either artificial colouring or preservatives. The chutneys range from the exotic, e.g. the popular Caribbean Chutney, to the old-fashioned and traditional, e.g. the also popular Green Bean Chutney, with various interesting varieties in between. Some jams contain seasonal delicacies such as elderflowers or blueberries, while some are old favourites like raspberry and damson.
Our preserves are delicious to eat and pretty to look at, being very attractively packaged. They make an ideal gourmet gift for friends and family, or could be bought as a little personal indulgence. |

| Details: Old Ley Court is a traditional
working family farm enjoying a peaceful setting in the Severn Vale on
the edge of the Forest of Dean. For over 40 years it has been home to Douglas
and Diana Smart and their their third son Roderick.
Dairying is the main enterprise on this small farm although pigs is are also kept.
For the last 19 years high-quality Gloucester cheeses have been produced from
milk from our own cows, all of which are born and reared on the farm and individually
named. They receive no routine antibiotics apart from dry cow therapy. No cows
have been bought in since two Old Gloucester cows (Amy and Unis) bought in 1996.
The cheeses, which are made from very old recipes, are equally lovingly cared
for, from the mild smooth Single
Gloucester, which is made from the evening milk, which is skimmed and added
to the mornings whole milk, (and for which we have the PDO)
to the mature full flavoured whole milk Double
Gloucester, and the strong hard Harefield, which can be used as an excellent
substitute for parmesan.
Cheesemaking can be seen, for a small fee, on Tuesdays and Thursdays. Booking
by phoning 0145 7502 is advisable. |

| Details: Sugarloaf Catering is a new company based in Abergavenny, which can provide a range of menus and products aimed at people who enjoy good food but haven’t got the time to make it. The company is owned by Mark & Claire Coulton and we have been trading since March 2005.I have over 18 years experience as a chef and met Claire in the early 1990’s while working for Franco Taruschio at the celebrated Walnut Tree Inn.
About two years ago while I was working as production manager for a local dessert company I identified that there was a gap in the market for a company providing good quality meals made from local produce as an alternative to the mass produced meals sold in supermarkets and so we developed the idea and with the contacts
I had developed over the years with local suppliers started developing a range of dishes using the best produce. One of the dishes on our current menu is “Oak roast salmon & smoked haddock fishcakes” these are made with fish from Black Mountain Smokery in Crickhowell & organic potatoes from a farm near Grosmont. Our philosophy is to support the local economy where possible so if we can’t buy a product from a local producer we will buy it from an independent local retailer we also support the local economy buy selling our products to customers at Abergavenny, Usk & Brecon Farmers Markets”
Besides producing ready prepared meals we have also diversified into other catering services and can offer buffets, dinner parties & children’s party food delivered directly to your door or for special occasions hire me to come & cook your dinner party for you. Overall Sugarloaf Catering can offer a range of products & menus of high quality with a personal service.

| Product: Vegetables, Plants, Batherapy |
| Details: Summergrove Fine Foods attempts to offer something different to lovers of good food and cooking through its range of unusual vegetables and salad plants. All are homegrown, without the use of synthetic chemicals, and are definitely not what you will find in the average supermarket
The range varies according to season and the vagaries of the Welsh climate. Currently, while waiting on this years plantings to mature to cropping stage, we are offering a number of grow your own plants for those cooks who are also keen gardeners.
Plants include podded radish (Great in salads and stir fries) and Italian summer squash with fruits which can easily grow to 3 ft. but when harvested at 12 to 18 in. long is a wonderfully flavorsome vegetable.
Think tomatoes cannot be exciting? Think again and try Tigerella, the most wonderful tasting
tomatoes that we have ever come across. It also looks gorgeous.
And, for those who like it hot, growing your own chillies with one of our plants from amongst a range of different varieties is as easy as falling
off a log. They are so prolific that you will find yourself dreaming up umpteen different recipes which use chillies or simply deep freezing the
lot (the easiest way of preserving them) or pickling them in vinegar for later use.
Other plants coming along at the moment include Alexanders, Salad Burnet, Cima di Rapa (a type of broccoli), Good King Henry, Hop (yes can be used
as a vegetable) Colewort, Chinese and Japanese salad varieties and unusual herbs.
Our full-grown, ready for cooking, vegetables and herbs will start becoming available shortly and yes we have ambitions to produce (hopefully before
end of 2006) a small range of gourmet food products incorporating the same.
To complement our fine food theme we are also producing a small number of "batherapy" products including Dead Sea bath salts and Bath teas/soaks
based on herbs. The products are created using organic ingredients-except for one of two of our formulae where it has proved impossible, to date,
to find an organic source for a few of the ingredients included (two ingredients in fact). Formal organic certification is currently being sought for these "batherapy" products. |
